Red Cabbage Apple Vinegar Salad with Mustard Dressing

I love salads, but I couldn’t eat it everyday even if I wanted to. Eating life, to me, has to be glorious. Not that I want to eat French fries everyday. But it has to be interesting. I think sitting down to a meal you enjoy is life’s way of bringing you to the moment and keeping you there for a little bit. We are all soooo busy all the time, that these small breaks become essential.



Dressing : 1 tbsp Apple cider vinegar, 3 tbsp olive oil, 1tsp lemon juice, 1/2 to 1tsp whole grain mustard, 1 tbsp honey, salt and pepper to taste. Add all this to a bottle and shake vigorously. Allow to sit for a couple of hours before using.

Salad – The big jar has red cabbage, apples ( as soon as you cut them, toss in some lemon juice to avoid oxidising ), cucumber, pomegranate. Place the basil on top so it doesn’t wilt till you’re ready to eat. This is a great way to carry salad to work, potluck’s, travel. Where you dress just before you eat and this will feed 4 people as a side or 2 as a light meal. .

You can make a small portion of spinach and tomato salad if it’s just for one ( maybe to work) and the dressing works great for this option too.
