Sweet Potato Sriracha Quesadilla

All Indian kitchens have a boiled starch in their refrigerators. Leftover rice, potatoes, lentils. They always are life saviors in case of a quick fix meal that needs to be put together in less than half hour and eaten with a hurried fervor. This is one such meal. A boiled potato or sweet potato (case in point) works very well. Filling and satisfying all at once!!




In a pan heat oil. Sauté chopped spring onions, garlic. Once cooked add salt, chilli powder and turmeric. Add boiled mashed sweet potato. Mix till combined. Add a squeeze of lemon, chopped coriander. One final stir and set aside. .

For the sauce : in a bowl mix sour cream and sriracha. The proportion totally depends on your taste. Some lemon juice, touch of olive oil, a pinch of sugar and salt. Stir and set aside.

On a tortilla or Roti, spread the sriracha sauce. Add the sweet potato mix, chopped spinach, grated cheese. Place another tortilla or roti on top. Cook on a hot pan with some olive oil till crisp and the cheese is bubbly.

Wedge and serve immediately. 😊😊
