Greek Yogurt Pancakes with Caramelised Bananas and Walnuts (Eggless)

These pancakes are the perfect breakfast treat. The caramelised nuts and fruit take it to the next level. The recipe is egg less too. Yet they are the real thing. Soft, fluffy, pillowy. Perfect to dunk with good quality maple syrup. Walnuts add the much needed bitterness. I love that. But If you don’t then, walnuts can be substituted with almonds. That would taste great too. Figs taste great here. Any fruit that would hold its shape is just absolutely perfect. Weekend breakfast just got sooooo much more interesting, don’t you think??

Recipe :

Ingredients :

Pancakes :

  • 1 cup flour
  • 3 tbsp sugar
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 cup greek yogurt
  • 1 tbsp melted butter
  • 1 tsp vanilla
  • 1 pinch salt
  • water as needed

Caramelised Nuts & Fruit :

  • 1 banana
  • Handful Walnuts
  • 1 tbsp melted butter
  • 2 tbsp sugar

Method :

  1. In a bowl whisk flour, salt, baking powder, baking soda and sugar.
  2. Create a well in  the centre of the flour and add Greek yougurt, vanilla and melted butter.
  3. Using a whisk combine the wet with the dry. Add water little by little till you get a thick – ish batter. Set aside.
  4. In another bowl add the fruit and nut. Toss with butter and sugar.
  5. Heat a pan and place the fruit. Allow to caramelise and crust on one side. Flip and allow the same to happen on the other side. Keep aside.
  6. In the same pan add the nuts. Toss till the nuts have a caramel coating. Set aside.
  7. By now bubbles would have started to appear in the pancake batter. Whisk lightly and adjust batter consistency.
  8. Heat a pan. Add butter and ladle one spoon of batter.
  9. Once bubbles start to form, Flip and allow to cook for a few minutes.
  10. Place on a plate. Top with the caramelised fruits and nuts. Pour over good quality maple syrup.
