I don’t know about you but when Diwali is close and I am making sweets and savories full throttle, I end up not craving it. I generally want some one pot comforting meal. Now that I think about it, it was the same when my grandmother used to make Diwali sweets, she never ate it. We all hogged till our eyes popped. But she always enjoyed comfort foods, one pot meals. Bringing you one such soupy one pot recipe that comes together in under half hour. Even if you don’t celebrate Diwali, this is a dish you should try just for the deliciousness that it is. It’s warm, it’s comforting, filled with good for you ingredients, mildly spiced and it’s wholesome. Serve with some cheesy garlic bread or top with some tortilla sticks and enjoy the meal.
Ingredients : Enough for 4 generous bowls
- 1/2 red lentils (Masoor Dal)
- 1 onion, finely chopped
- 1 celery stick, finely chopped
- 2 carrots, finely chopped
- Vegetables of choice, cubed (I have used Potato, Coloured Capsicum, zucchini)
- Zest and juice from 1/2 orange
- 2 cups of water
- Chilli Flakes, to taste
- 1 tsp Coriander Powder
- 1 Cinnamon stick
- 1 Star Anise
- 1 tsp crushed Cumin
- 2 tbsp Olive Oil
- Chopped Coriander Leaves
- Salt, to taste
- In a heavy bottomed pan, heat some olive oil. Add the onions, celery and carrot along with a tsp of salt. The vegetables should soften but not brown.
- Once softened add cinnamon, star anise, cumin, coriander powder, chilli flakes. Saute for a minute.
- Add the vegetables, reduce the flame and cover and cook for a few minutes.
- Add the orange juice, water (add more if you think it needs it), red lentils, orange zest, salt. Give it one big stir and allow to come to a rolling boil.
- Reduce flame and simmer for 10 mins. By this time the lentils would have cooked and the vegetables softened. Turn off the flame.
- Fish out the cinnamon and star anise. Add a heaping of chopped coriander. Cover and rest for 10 minutes before serving.
Optional Sides :
- Toast some bread and top with grated cheese and grill till cheese melts
- Rub some oil and chilli powder on a tortilla. Cut into strips. Bake in a preheated oven @180 C for 3 minutes. Alternatively it can be tossed in a hot dry pan till crisp.
