RECIPE ( MAKES 2 SERVINGS )
INGREDIENTS :
- 2 Eggs
- 4 tbsp Cocoa Powder
- 2 tbsp Olive oil
- 8 tbsp Castor Sugar
- 1 tsp Vanilla
METHOD :
- In a bowl add the eggs and sugar. Place over a pot of simmering water and whisk slowly till the eggs are slightly warm to the touch and the sugar is melted. ( Make sure you whisk constantly and the eggs don’t cook. This step is to melt the sugar as well as pasteurise the eggs )
- Take the eggs off the heat , add cocoa powder, olive oil, vanilla. Whisk softly so as to not create large air bubbles.
- Strain the mixture into a jug, just to make sure no cooked bits get through.
- Pour into tiny glasses and allow to set for a minimum of 30 minutes or make it ahead and allow to sit in the fridge till ready to serve.
