Molten Lava Chocolate Pudding

What is better than molten lava cake and chocolate mousse? A chocolate pudding that combines the two. When cold and set it’s mousse like and as it melts its turns into delicious molten lava pudding.   • 2 Eggs
  • 4 tbsp Cocoa Powder
  • 2 tbsp Olive oil
  • 8 tbsp Castor Sugar
  • 1 tsp Vanilla



  1. In a bowl add the eggs and sugar. Place over a pot of simmering water and whisk slowly till the eggs are slightly warm to the touch and the sugar is melted. ( Make sure you whisk constantly and the eggs don’t cook. This step is to melt the sugar as well as pasteurise the eggs )
  2. Take the eggs off the heat , add cocoa powder, olive oil, vanilla. Whisk softly so as to not create large air bubbles.
  3. Strain the mixture into a jug, just to make sure no cooked bits get through.
  4. Pour into tiny glasses and allow to set for a minimum of 30 minutes or make it ahead and allow to sit in the fridge till ready to serve.
